#31 Christmas muffins with dark chocolate topping, powder sugar and raspberries

Soon Christmas will be here and I am so thrilled that I’ll get to celebrate it with friends and family back in my homeland!!! 🙂 I’m now packing my suitcase and just can’t resist sharing with you one of my most delicious recipes, which is just perfect for these days! Which ingredient comes to your mind first when one says “Christmas”? For me it’s chocolate, chocolate, chocolate!! 😛 That’s why I present to you a super-easy, super-quick and SUPER-tasty muffin recipe! 😉

WHAT YOU NEED:

For the muffins:

75g of butter

3 dl of all-purpose flour

1 dl of cacao powder

2 dl of granulated sugar

1 pinch of salt

2 teaspoons of baking powder

1 teaspoon of vanilla powder

2 dl of fresh milk

2 eggs

For the topping:

200g of dark chocolate (you can also try milk chocolate instead)

200f of cream cheese

50g of butter at room temperature

50g of powder sugar

 

HOW TO:

Preheat the oven at 225 degrees. Melt the butter. Mix all the dry ingredients (first sift the flour, the baking powder and the cacao powder).

Take another bowl and whisk the eggs together with the milk. Pour the mixture into the one with your dry ingredients and stir really well (don’t overdo it though!). Pour the mixture into muffin forms and bake for 15-20 minutes.

For the topping melt the chocolate and whisk separately the butter, the sugar and the cheese until the mixture becomes creamy. 

TIP: Either with topping or not, these muffins are delicious and stay fresh for quite many days. As you can see I have been a little bit naughty and put bits of dark chocolate in some of them! 😛 The sourness of raspberries brings balance to the sweetness of the powder sugar and both of them make a great match with the topping. You should definitely try this! 😉
