#18 Vegetable soup with thyme

Here in Sweden it has already started getting seriously colder, mushroom “colonies” is all one can see in the parks and leaves fall from the trees like crazy! Therefore, it’s no wonder why somebody would crave for a hot tasty soup! 😛 Well, guess what… That’s our dinner for tonight! A yummy yet easy soup for you and your beloved ones… 😉


250g of potatoes

2 big carrots

1 medium leek (cut in fine pieces)

A pinch of thyme

1l of water (approximately)

200ml of milk cream (regular milk would also do)



Virgin olive oil


Take a saucepan, pour some olive oil and fry the leek for a bit. Add the potatoes and carrots and stir for a while. Add the water, salt, pepper and thyme and let it boil in medium temperature until the vegetables become soft enough to get cut with a fork. When done, put the whole of your soup in a blender in order for it to get a more velvety texture. Put it back to the saucepan, pour the milk cream (or milk) and let it boil for a couple of minutes. There you go!! 

TIP: Flatbread goes really well with the soup!
